Day 3 of 365 Days of Food

Day 3:

Cauliflower tetrazzini with roasted broccoli and brussel sprouts.

The picture does not do this meal justice. It was really good! Whole wheat noodles and roasted cauliflower instead of chicken made this a much healthier option. I added some broccoli and brussel sprouts on the side because I knew the boys would eat those and always try to have one familiar item on their plate when trying something new. I roast some type of vegetable almost every night. Olive oil + salt and in the oven while I am putting together the rest of the meal…such an easy side!

I got the recipe from the Simply Vegetarian Cookbook. I use this cookbook on a regular basis and have loved everything!
