Sunday’s are for prepping food and cooking a little more complicated recipe.
I tried out the Minimalist Bakers Vegan Meatballs. However, we are not vegan so I used parmesan cheese and we ate them on sandwiches with fresh mozzarella.
They did feel time consuming, but in the end it really wasn’t. Sometimes following a new recipe takes more concentration, but this one was 100% worth it.
I put Will’s on a brioche hoagie bun and mine on a wheat hot dog bun.
The boys even loved them-I cut one of the wheat buns into thirds so they were smaller and more manageable. Of course, roasted vegetables on the side and this meal was a hit by all!
