Day 8:

Roasted Cabbage.

Um roasted cabbage for dinner? Well this was not your typical cabbage. Smitten Kitchen has a recipe that takes cabbage to an entirely different level.

I usually don’t love cabbage but the health benefits are huge for this vegetable and preparing it this way makes you want to eat the entire pan–and I almost did! Look at those charred ends with walnuts and cheese…please try this!

I made the cabbage to go along with some leftovers from late last week and it was delicious!
