Our love for pizza is huge in this house and this was a great recipe to lighten up on the carbs for a weeknight dinner!
I made a few changes to the recipe: I roasted the cauliflower instead of steaming it. I added in more vegetables using spinach, peppers, and zucchini. I did add the pepperoni on Will’s half but did not use any sausage like the recipe called for.
It was super easy and could be made up ahead of time to be baked off on a busy weeknight.
