Day 13 of 365 Days of Food

Day 13:

Baked Tortellini.

Comfort food at its finest here my friends. I get cheese tortellini, sliced mozzarella, and Rao’s marinara sauce from Costco and this meal is almost complete.

I boil both packages of the noodles and drain them. I toss them with 2 eggs, handful of parmesan, and the jar of sauce. Then put half of the noodles in a 13×9 deep pan and layer it with slices of mozzarella. Cover it with the remaining pasta and finish the top with more cheese. Bake for 45 minutes at 375 degrees and dinner is done!

I tried out a quick batch of these homemade rolls to go with our meal along with a pan of roasted broccoli and brussel sprouts.

  1. This looks delicious … I would love to give this a try sometime. I know you’re in the midwest so if you are ever driving on interstate 55 in IL you should totally hit up a restaurant called Avanti’s they have incredible Tortellini. Now I’ve moved away I will have to find other brands of tortellini to get my fix! ❤
