Broccoli Cheddar Soup and Honey Buttermilk Biscuits.
I am enjoying soup season while it lasts because I am definitely ready for some warm weather around here.
I loosely followed the million and one copycat Panera Bread broccoli soup recipes that are online, but did my own thing with it as well. I feel like soups are meant to add what is needed and not necessarily follow a recipe. Maybe that is why I end up with a huge pot of soup at the end?! I didn’t want it to be full of cream and butter so I cut back a lot on those but still added lots of cheddar cheese at the end.
The biscuits…as I baker I am embarrassed to say I think I have made biscuits maybe one time-yikes! However, biscuits are super easy and these came out pretty yummy to go with our soup. I followed the recipe in my Simply Vegetarian cookbook-which once again proved this cookbook is a winner!
