Day 16 of 365 Days of Food

Day 16:

Roasted Veggie Bowls.

Big beautiful bowls filled with lots of yummy stuff are all over Pinterest right now. They look amazing and can make you hungry at anytime of the day when you see them. Well, they are about as easy as ever to make. This is actually a prep I do to have on hand for four lunches for the week.

I roast 2 pans of vegetables to prep four lunches. I usually do broccoli, carrots, cauliflower, brussel sprouts, sweet potato, and lots of red onion or shallots.

I cook a bag of this rice and divide it between the four containers as my grain.

When I go to eat the lunch I heat the veggie/rice mix up with along with a few spoonfuls of this General Tso’s sauce I make every few weeks. I put it in a big bowl topped with lots of spinach.

Bowls can use up so many things in your refrigerator, easily adaptable for everyone, and a great lunch or dinner.
