Happy Saturday!

Today I have the perfect weekend breakfast or brunch meal for you to enjoy.

Egg and Vegetable Hash Brown Bake.

This is a great weekend morning meal because it can even be made up ahead of time to just bake off in the morning.

Or even better let the kids help make it. Have you found if they help in the kitchen they are more likely to eat what you serve?

This recipe is once again from my Simply Vegetarian book. But, it is simply sauteed vegetables tossed with hash browns that are layered in the bottom of your pan and then topped with an egg, milk, sour cream, and cheese mixture. Simple and delicious!
