Cauliflower Ranch Wrap.
Last year we went out to a restaurant up in Indianapolis while visiting Will’s brother and I ordered a wrap that I could not stop thinking about. Ever since I have been recreating it and it is a favorite in our house!
I put half a head of cauliflower chopped up in a Ziploc with a few tablespoons of olive oil and tossed it together. Next, I added a few tablespoons of cornstarch and garlic powder and mix it all up. Roast it on a pan in the oven at 425 degrees for 30-45 minutes until super dark and crispy.
Warm a few tortillas up and layer with lettuce, tomato, cheese, the roasted crispy cauliflower, ranch, and a few shakes of hot sauce if you want. And dinner is done!
