Day 22:

Crispy Black Bean Burgers.

These are our go-to burgers and the oats in this recipe give the outside of the burger lots of crispiness.

Once again this recipe came from the Simply Vegetarian Cookbook. However, there are a ton of different black bean based veggie burgers out there if this gives you some inspiration!

We had it with a salad and roasted red potatoes tossed with olive oil, salt, and Italian seasoning.
