Day 23:

Veggie Quesadillas.

You can’t go wrong with Mexican. And a quesadilla is about as easy as they come, right?

I sauteed strips of peppers, onions, and spinach with a little olive oil. I left them a little crispy so it wasn’t all mush inside the quesadilla. I took a block of cheddar cheese, shredded it (shredding your own cheese is so much better on the flavor!) and layered up my quesadilla to griddle them in the pan with a little butter.

I made a quick homemade guacamole with a side of lettuce, chips, and salsa.

Really short on time? Have the fillings all ready to go when you are prepping for the week and dinner can be done super fast after a busy day.
