This has been put on my lunch prep rotation for the week. A single batch of this easily made 6 lunches to eat on for the week and to have on hand for an easy go-to meal.
By using the instant pot this Instant Pot Quinoa Salad from Eating Instantly came together super fast with very little hands on time.
For my meals I have been adding spinach and romaine to make it more of a salad topped with salsa. You can definitely eat this on its own as well.
I left out the corn and added an entire bag of edamame. You seriously can’t beat this healthy, make ahead, and easiness of this meal!
