Day 28:

Roasted Vegetable Flatbread.

Need a recipe to use up lots of veggies that are on their last life in your refrigerator?!

I used this recipe as a guide, but just used an assortment of vegetables I had on hand. I replaced the micro-greens that were called for in the recipe with just chopped spinach.

Don’t make recipes difficult. Sometimes I will read a recipe and they seem overly complicated so I try to take out parts that aren’t necessary and replace them with easier steps or items I keep on hand.
