I love huge salads with tons of yummy stuff piled on top.
So we had a little more of the stuffed pepper filling (I HATE wasting food!) so we made some big taco salads.
I took a soft burrito shell and sprayed it with cooking oil, wrapped it over a foil ball, and baked it at 400 degrees until brown and crispy–easy homemade taco shell for the salad.
To finish it with the leftover filling I added chopped romaine, spinach, fresh cheese, avocado, and a salsa ranch dressing to the top and a delicious dinner was done.
Be creative with leftovers. Even if you aren’t a leftover fan you can always find ways to make a new meal out of a part of the leftovers.
