Day 41:

Baked Risotto with Roasted Vegetables.

Traditional risotto calls for standing at the stove adding in the warm broth a cup at a time. That is not possible with life and kids and simply needing to do other things.

This baked risotto turns out perfectly every single time without any effort of standing at the stove. Literally throw it in the oven!

Topping it with warm roasted vegetables makes this dinner seem fancy but definitely not a lot of time. Enjoy!
