With everything going on right now I have been baking to keep my anxiety down. Yesterday I posted the healthy morning glory muffins, today I have a not so healthy pumpkin cake. Balance, right? Baking brings me so much calmness and then everyone can benefit from the end result.
This pumpkin cake is sweet and moist and ever so delicious. I didn’t have cream cheese so I just did a cinnamon brown sugar topping.
