This soup recipe from Minimalist Baker was a great way to use up some vegetables that were looking a little sad in our fridge. I love following a certain soup recipe but I love that you can mix and match so many different ingredients to use items up!
We had it with the no knead bread t(hat I seriously make every single week) and dinner was great.
Soup leftovers are wonderful as well. It makes for great lunches and I swear a soup gets better as it sits in the refrigerator.
