Happy Friday! How is everyone holding up? What a crazy few weeks it has been filled with so much unknown and high anxiety. I have went 2 weeks without the grocery so meals have been pantry based and using up refrigerator items.
Easy vegetable quesadillas.
I literally sauteed peppers, onions, spinach, and then added black beans and rice to make a super filling for our quesadillas. Dinner was easy and helped clean out the last of the fridge before stocking up this weekend.
