Buffalo Cauliflower Chili.
I made this in the Instant Pot and every time I use it I am amazed how easy that thing is! It is so hands off and done so fast.
This was the perfect soup for both filling and a tad spicy.
I followed this recipe but added an additional 3 cups of vegetable stock and a couple stalks of celery into the Instant Pot as well. For the Instant Pot I put it on high pressure for 15 minutes and quick released the pressure.
We topped it off with tortilla chips and cheese. Enjoy!
