Day 69:

Tempeh Sloppy Joes.

While tempeh may not be your protein of choice this is a great recipe you could substitute beef, but we absolutely loved the tempeh and it is a really healthy option.

The changes I made to the recipe: leaving out the corn, cayenne pepper, and only using 1 Tablespoon of brown sugar to make it more toddler friendly.

The recipe makes a huge batch and the boys have been having it for lunch multiple days as well.
