Vegan Buffalo Chickpea Quesadilla.
This recipe definitely intimated me by making a “cheese” sauce from soaked cashews. However, I was up for the challenge and I am really trying to branch out from our normal meals and this one fit that completely!
The verdict: it was absolutely amazing. Between the creamy sauce, spicy roasted chickpeas and the delicious onions this was definitely a winner that I will make again.
